Commonly known as zucchini squash, believed to be originated from central America and mexico is a tender, soft skinned crunchy and hydrated vegetable. They come as green, yellow or golden zucchini. It contains folate, potassium, vitamin A, C and B complex. They are used as raw salads, supplements in various snack and vegetable preparations. They are available all round year but best in late springs and summers.
